Belgian endive first discovered in the 1830ish in the provinces surrounding Brussels, are the fresh shoots from the chicory root, which were stored in dark humid shacks and used for coffee making.
Traditionally an end winter vegetable with a delicate slightly sweet bitter taste. It was referred to as the white gold as endive then being one of the few fresh vegetable available on the markets.
